Veal rib and loin chops are some of my favorite cuts of meat. There are a lot of diferent types of veal on the market now, and most are pretty ethical. So do your research and enjoy!
Offal are the organ meats, cheeks, tongues, heads, tails and glands. Basically, the good stuff. Sweet breads may be the best of the lot though.
