What is Stewing?

Stewing is very similar to braising, except that stewed dishes usually end up with more liquid. In braised dishes, the liquid is often reduced and served on the side as a sauce. The ingredients in stew are often cut into bite-size pieces before they are cooked, or they become that way through cooking. But the main difference between stewing and braising is that in braising, steam plays an important role. But in stewing, everything is completely submerged, so it isn't exposed to steam.

Tools for Stewing

  • Stock pot – you need something big to contain all that liquid and goodies.
  • Crock pot – also called a slow-cooker, these are great ways to make stew.
  • Frying pan – often the stew ingredients are browned before they are stewed.
  • Ladle – not very good for stirring--see "stew in your eye"--but great for serving.
  • French oven – one of the ways the French make stew. But for "daube" a daubiere works best.
