What is Soup?

Soup can be as simple as a seasoned stock. Although technically that would be considered more of a broth or, if you want to get really fancy, a consomme. But in general, the word "soup" refers to things suspended in liquid, the liquid generally being thinner than stew. Sometimes soups are made with stocks and sometimes they are made with plain water. I think the easiest way to make soup is from leftovers. Leftover roast chicken becomes chicken noodle soup, leftover ham bone becomes ham and white bean soup, etc. Use good ingredients and combine them simply and well to make really good soup. Below I have listed some of my soup recipes; see if one of them strikes your fancy.

Soup Tools

  • A stockpot – Often, soup is made in a stock pot of some sort. Or a large saucepan, depending on how much soup you are making.
  • Frying pan – Sometimes the soup ingredients need to be fried a little bit before they are added to the soup.
  • Measuring cup - Soups are often just thrown together odds and ends. But for those soups with exact proportions, which are many of them, you will need a good measuring cup.
  • Ladle – The best way to serve soup is with a good ladle. They come in utilitarian and fashionable designs alike. Sizes also vary.
  • Blender - For making pureed or blended soups the immersion or stick blender works really well.
