This category is sort of a generic way of lumping together all of the birds that aren't popular enough to have their own page. Which, if you think about it, is pretty much every bird except chicken, turkey, and duck. Not that these "others" aren't important or delicious. Because they are most definitely both of those things. It's just that they are not as popular. But what's popularity anyway?
Birds that you might find here are as follows: goose, pheasant, squab, pigeon, grouse, partridge, quail, etc. But birds that are just variants or forms of chicken, like poussin or cornish hens, are in the chicken category.
