Just over a hundred years ago the American Bison (Bison bison) faced extinction. Overhunting, greed, and politics had decimated the great herds. At the turn of the century, the majority of the living bison were on ranches. Some ranchers saw potential in raising bison, and others just wanted to ensure they didn't go extinct. Thus began the commercial raising of bison for their delicious, yummy meat.
