waldorf salad recipeThis recipe for Waldorf salad is something I came up with while cooking dinner at my Grandma Barb’s house. I love cooking at Grandma’s house, she has a really nice gas range, convection oven, garden, fresh herbs, and lots of cookies in the pantry. As you can imagine with a nice oven like hers, I often roast meat when I cook at her house. I lived with my Grandma for about 4 months back in 2008. It was a very memorable and good time for me. If you ever get a chance to live with your grandma I suggest you go for it. Just be careful not to stay too long, it’s very easy to regress to a child-like state. Give it a couple months and then move on.

The salad recipe is noticeably lacking walnuts, we didn’t have any. But other then that I only made on addition, rutabaga. In a sense the rutabaga was a substitute for the walnuts. I would definitely add walnuts if I was to make this salad again. But I’m keeping the rutabaga in too. I like it a lot.

Waldorf Salad with Rutabaga | we called it Waldork

1 cup raw rutabaga, medium dice

1 cup raw apple, medium dice

1/4 cup celery, minced

2 T parsley, minced

1 T lemon juice

4 T heavy mayonnaise

2 T lightly toasted walnut halves

Combine and serve over a bed of lettuce chiffonade.

We ate the salad alongside roasted leg of lamb. It was good.
